But you can bring together a list of pies that contain all those tasty items, as I have done for the Arkansas Times. The list contains five fried pies, over a dozen meringue pies and seven of the best possum pies I’ve found anywhere.

In Arkansas, the Possum Pie consists of three layers -- a cream cheese layer (sometimes substituted with a sour cream or vanilla pudding instead), a chocolate custard layer and a whipped topping layer. Most places serve theirs up on a pecan sandy crust -- ie, an unsweetened flour crust dotted with pecans. Many scatter pecans over the top of their pies.
It’s served up in so many restaurants but is more prevalent in said restaurants in western Arkansas. For those who are interested in making their own, here’s an easy recipe for two pies. Yes, you’ll want two.

1 ½ stick butter
2 cups crushed pecans, separated
2 cups flour
1-8 ounce package cream cheese, room temperature
12 ounces Cool Whip, divided
1 cup confectioners sugar
1 box milk chocolate instant pudding
1 box chocolate fudge instant pudding
3 cups milk
Heat oven to 350 degrees. Cut butter into flour to make crumbly pastry dough. Add 1 cup crushed pecans. Press into two 8 or 9 inch pie pans or one 13"x9" casserole. Bake 15 minutes or until flour starts to brown. Remove and cool.
Cream together cream cheese and confectioners sugar. Add six ounces of Cool Whip and beat until fluffy. Spread over bottom of both pies.
Blend together both pudding mixes with milk. Pour in on top of the cream cheese mixture and allow to set.
Spread remaining Cool Whip over the top of both pies and sprinkle with pecans. Serves 16, if you’re lucky.

One more thing. There is a case that can be made for the Possum Pie to become the state pie of Arkansas. We have a state dirt, a state grape wine, a state bird, a state slogan -- why not create the Possum Pie as our state pie? Comments welcome.

ReplyDeleteI tried 1 in Eureka Springs, was good, found the recipe, made my own from scratch, No Comparison mine was out of this world, AMAZING! So stick with the all scratch pie.

ReplyDeleteNever tried it. But I'm from Sweden so the taste might not be as awesome as the real deal when I make it. My husband is from Alabama, but he's never had possum pie either so we'll just see. I'm making it for our early Thanksgiving dinner :)
