Quarantine Cuisine: Parmesan Turkey Rice.

Recipe #1 of my One Turkey challenge, including turkey meat and broth, rice, Parmesan cheese and parsley - for a good comfort food meal.

Parmesan Turkey Rice

1 cup chicken or chicken and herb rice mix
1 cup white rice and one chicken bouillon cube

2 cups water

1 cup reserved turkey broth or 1 can chicken or vegetable broth

2 cups turkey, shredded (chicken also works)

1 tablespoon shredded Parmesan cheese

1 teaspoon dry parsley

In a four quart or larger pot, set water to boil. Add chicken and rice mix or white rice and chicken bouillon cube. Stir well. Bring to a boil, then reduce to a simmer for five minutes.

Add turkey and broth, and let simmer until broth has been absorbed by the rice.

Remove from heat. Stir in cheese and parsley.

Add side of choice. Serves four.
